Six Sections

Main building cooking
We create wedding and banquet dishes and develop menus divided into Japanese, Western, and Chinese cuisine. The food served at weddings and banquets is divided into detailed sections, from appetizers to main dish finishing, and we prepare meals for large groups with great care.

Hakuhokan cooking
Hakuhokan is an annex located within the gardens of HAPPO-EN-en. Equipped with an open kitchen, Hakuhokan creates wedding and banquet dishes and develops menus with the concept of authentic and unique cuisine.

Restaurant Kochuan
Kochuan is a Japanese restaurant that has entertained many celebrities, including President Joe Biden. They serve kaiseki cuisine that incorporates seasonal ingredients. The cuisine is full of flavor, based on traditional Japanese cuisine and made with seasonal ingredients.

Central Kitchen
We develop and serve catering dishes that are delicious, beautiful, and safe to suit the occasion and your needs. We also develop dishes for local government events and delivery.

Restaurant Cuisine
Cooking at Thrush Café, a restaurant located HAPPO-EN. The menu changes with the seasons, and dishes are created and served with great respect for the connections with producers.

Pastries
Wedding cakes and desserts are prepared and finished in the pastry kitchen HAPPO-EN. We can handle a wide range of events, including course desserts, sweets buffets, wedding cakes, and banquet desserts.

"FSSC 22000" is a food safety certification scheme approved by the International Food Safety Initiative. At HAPPO-EN, we have obtained certification in Category E, which covers not only serving food in banquet halls and guest rooms, but also catering.

There are 115 public holidays per year, so you will have 8 days off per month.
After joining the company, OJT training is the main focus. It depends on the department you are assigned to, but basically the company will cover part of the exam fees for obtaining qualifications set by the company/there is a qualification allowance.
Every six months, employees undergo self-evaluation and evaluation by the division manager. In addition, employees have one-on-one meetings with their superiors and seniors once a month to review their performance and set goals.

When a chef has decided on the path he or she wants to pursue, we have an internal recruitment system in place to support them as an organization in pursuing that path to the fullest. We also have many young staff members in their 20s who are encouraged to take on challenges by participating in external competitions, which they consider to be a way to build their careers and gain success.
